This bake is based on cornbread but includes chickpea flour and grated vegetables to create something a little different.<\/h2>\n<h3>Ingredients<\/h3>\n<p>Makes 12 slices<\/p>\n<ul>\n<li>\u00bd cup chickpea (besan) flour<\/li>\n<li>\u00bd cup polenta<\/li>\n<li>1 cup plain natural yoghurt<\/li>\n<li>\u00bd cup grated carrot<\/li>\n<li>\u00bd cup grated zucchini<\/li>\n<li>\u00bd cup sweetcorn kernels<\/li>\n<li>2 tablespoons extra virgin olive oil (EVOO)<\/li>\n<li>1 large egg, lightly beaten<\/li>\n<li>1 teaspoon baking powder<\/li>\n<li>freshly cracked black pepper to taste<\/li>\n<li>40g grated tasty cheese<\/li>\n<\/ul>\n<h3>Method<\/h3>\n<ol>\n<li>Pre-heat oven to 2000 C (1800 C fan assisted)<\/li>\n<li>Line a 20 x 30cm baking tray with baking paper<\/li>\n<li>In a large bowl mix the besan flour and polenta together<\/li>\n<li>Stir in the yoghurt and mix well<\/li>\n<li>Lightly squeeze out any excess water from the grated carrot and zucchini and add to the bowl together with the sweetcorn, extra virgin olive oil, egg and baking powder<\/li>\n<li>Mix well and season with a little cracked black pepper<\/li>\n<li>Pour the mixture into the lined tin, smooth the surface and sprinkle with the grated cheese<\/li>\n<li>Bake in the centre of the pre-heated oven for 20-25 minutes or until firm to the touch and a light golden colour<\/li>\n<li>Remove from the oven and rest for 5 minutes before cutting into portions<\/li>\n<\/ol>\n<h3>Serving suggestions and tips<\/h3>\n<p>Delicious served hot or cold. A perfect savoury snack for lunch boxes, or serve as a side with grilled chicken or chilli con carne and salad.
