{"id":6135,"date":"2018-10-10T15:22:56","date_gmt":"2018-10-10T05:22:56","guid":{"rendered":"http:\/\/intraining.com.au\/?p=6135"},"modified":"2018-10-10T15:22:56","modified_gmt":"2018-10-10T05:22:56","slug":"herbed-chicken-with-herb-yoghurt-dressing","status":"publish","type":"post","link":"https:\/\/dev3.dxcoders.com\/index.php\/2018\/10\/10\/herbed-chicken-with-herb-yoghurt-dressing\/","title":{"rendered":"Herbed chicken with herb yoghurt dressing"},"content":{"rendered":"<h1>Herbed chicken with herb yoghurt dressing<\/h1>\n<p><em><span style=\"font-weight: 400;\">Liz Lovering, intraining accredited sports dietitian, chef, coach and runner<\/span><\/em><\/p>\n<h3><i>Ingredients<\/i><span style=\"font-weight: 400;\"> (<\/span><i>Serves 4)<\/i><\/h3>\n<ul>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">2 tablespoons extra virgin olive oil (EVOO)<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">2 large garlic cloves, peeled<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Juice and zest of \u00bd a lemon<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1 bunch of fresh flat leaf parsley, washed and stalks removed<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">A handful of fresh basil leaves, washed<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">A handful of fresh mint leaves, washed<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">500g skinless, boneless chicken thighs or breast, trimmed of fat <\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">200g thick plain Greek yoghurt<\/span><\/li>\n<\/ul>\n<h3><i>Method<\/i><\/h3>\n<ol>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Place EVOO, garlic, lemon juice and zest, parsley, basil and mint into a food processor and whizz until smooth<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Place the chicken a bowl and pour on 2\/3rds of the herb marinade, mix well and place in the fridge for a couple of hours<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Meanwhile mix the remaining marinade into the yoghurt, season with a little salt and fresh cracked black pepper and keep in the fridge until required<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">When you are ready to cook, heat up a barbeque and cook the chicken until golden brown and cooked through<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Remove from the barbeque and rest for a few minutes<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Slice the chicken and serve in bowls topped with some of the herb yoghurt dressing<\/span><\/li>\n<\/ol>\n<p><span style=\"font-weight: 400;\">For a balanced meal serve with \u00bd-1 cup of carbohydrate; e.g. cooked rice, quinoa, pasta or sweet potato, and plenty of different coloured cooked vegetables or salad<\/span><\/p>\n<h3><i>Serving Suggestions and Tips<\/i><\/h3>\n<p><span style=\"font-weight: 400;\">This is a quick and easy chicken dish. Delicious served hot or cold. My choice of herbs was based on what I had in abundance in the garden, but you could use other types. I served my chicken hot with basmati rice, grilled mushrooms, roasted red capsicum, baby spinach leaves and broccolini, but use whatever you have to hand.
